He also learned how to extract its luscious flavor and, more importantly, how to age the extraction so that it could become a fine aromatic essence.
As part of the complicated training in the Master Chocolatier’s kitchen, Warren Leruth learned a golden rule of flavoring which he was never to forget or underestimate: Technique-Time-and-Temperature. Naturally, the upcoming young chef became fascinated with the curious vanilla bean and its delicate uses and did some research on it with the assistance of the Master Chocolatier.
